Preparing Sushi Rice

In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

In a rice cooker or pot, combine rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes.

Once the rice is cooked, transfer it to a large bowl. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spatula, being careful not to mash the grains.

Let the seasoned rice cool to room temperature, covering it with a damp cloth to prevent it from drying out.
