Method

Prepare the Base

  1. 1

    Cook the Sushi Rice

Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.5 cups of water in a rice cooker and cook according to the manufacturer's instructions, or bring to a boil in a pot, then reduce heat to low, cover, and simmer for 20 minutes.

  2. 2

    Season the Rice

Once the rice is cooked, transfer it to a large bowl. In a small saucepan, combine 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoons of salt. Heat gently until the sugar and salt dissolve, then pour this mixture over the rice. Gently fold the rice with a spatula to combine and let it cool to room temperature.

Prepare the Protein

  1. 3

    Marinate the Tuna

Cut the 8 oz of sushi-grade Ahi tuna into bite-sized cubes. In a bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 2 tablespoons of sliced green onions. Add the tuna to the marinade and let it sit for about 15 minutes to absorb the flavors.

Assemble the Bowl

  1. 4

    Add the Base

Scoop a portion of the seasoned sushi rice into a bowl as the base.

  2. 5

    Add the Protein

Place the marinated tuna evenly over the sushi rice.

  3. 6

    Add Toppings

Artfully arrange the sliced avocado, cucumber, radish, and seaweed salad on top of the tuna and rice.

  4. 7

    Finish with Sauce

In a small bowl, mix 1 tablespoon of Sriracha with 2 tablespoons of mayonnaise for a spicy sauce. Drizzle or dollop this sauce over the assembled poke bowl.

  5. 8

    Garnish and Serve

Sprinkle sesame seeds over the top for garnish, and serve immediately with additional soy sauce if desired.
