Prepare the Base

Cook the Sushi Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.5 cups of water in a rice cooker and cook according to the manufacturer's instructions, or bring to a boil in a pot, then reduce heat to low, cover, and simmer for 20 minutes.

Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a small saucepan, combine 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoons of salt. Heat gently until the sugar and salt dissolve, then pour this mixture over the rice. Gently fold the rice with a spatula to combine and let it cool to room temperature.

Marinate the Tuna
Cut the 8 oz of sushi-grade Ahi tuna into bite-sized cubes. In a bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 2 tablespoons of sliced green onions. Add the tuna to the marinade and let it sit for about 15 minutes to absorb the flavors.
