Prepare the Broth

    Make the Dashi

    In a pot, bring 4 cups of dashi stock to a gentle simmer over medium heat.

    Add Seasonings

    Stir in 3 tablespoons of soy sauce, 2 tablespoons of mirin, and 1 tablespoon of sake. Let the broth simmer for about 5 minutes to combine the flavors.

Cook the Udon and Vegetables

    Prepare Udon

    While the broth is simmering, bring another pot of water to a boil. Add 300g of udon noodles and cook according to package instructions, usually about 8-10 minutes. Drain and set aside.

    Add Vegetables

    In the pot with the broth, add 100g of shiitake mushrooms (sliced), 2 cups of bok choy (chopped), and 1 medium carrot (sliced thinly). Allow to simmer for another 5-7 minutes until the vegetables are tender.

Add Protein (if desired)

    Incorporate Tofu and Shrimp

    If using tofu, cut 200g into cubes and add it to the pot along with 200g of shrimp. Cook for an additional 5 minutes until the shrimp are pink and cooked through.

Serve

    Combine and Serve

    In serving bowls, add a portion of udon noodles. Ladle the hot broth and vegetables over the noodles. Garnish with sliced green onions (3 stalks). Serve hot.
