Preparation and Cooking

    Clean the Mackerel

    Rinse the mackerel under cold running water. Use a sharp knife to scale the fish by scraping against the skin starting from the tail towards the head. Make sure to remove all scales.

    Gut the Fish

    Using the knife, make an incision along the belly of the fish from the head to the tail. Remove the entrails completely and rinse the inside of the fish under cold water.

    Season the Fish

    Rub the salt and black pepper inside and outside of the cleaned mackerel. Make sure to coat it evenly for best flavor.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are covered with white ash.

    Oil the Grill Grate

    Using a paper towel soaked in olive oil, carefully wipe the grill grates to prevent the fish from sticking.

    Grill the Mackerel

    Place the mackerel on the grill. Cook for about 5-7 minutes on each side, or until the fish is cooked through and has grill marks. Use a spatula to flip the fish carefully.
