Method
Prepare Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker or a pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce to low, cover, and simmer for 18-20 minutes until the water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl, gently fold in the vinegar mixture, and allow to cool to room temperature.
Prepare Crab Mix

Prepare Crab
Chop the imitation crab meat into small pieces and place it in a mixing bowl.

Mix Ingredients
Add mayonnaise, sriracha, lemon juice, and chopped chives to the crab meat. Mix until all ingredients are well combined.
Assemble Gunkan Sushi

Cut Nori Sheets
Cut each nori sheet into strips about 2 inches wide. You will need two strips for each gunkan.

Form Rice Bases
With wet hands, take a small amount of sushi rice and form it into an oval shape that is about 1-2 inches long and 1 inch wide.

Wrap Nori Around Rice
Take two strips of nori and wrap them around the oval-shaped rice, leaving the top open. The nori should overlap slightly.

Fill with Crab Mix
Spoon the crab mixture generously into the open top of the gunkan. You can mound it slightly for a nice presentation.

Garnish
Sprinkle sesame seeds on top and add extra chopped chives for garnish, if desired.
