    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a bowl, combine the ground pork, finely chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are fully combined.

    Form the Gyoza

    Divide the dough into small pieces (about 1 inch in size). Roll each piece into a circle approximately 3 inches in diameter. Place about 1 tablespoon of filling in the center of each circle. Wet the edges with water, fold over, and pinch to seal tightly. Repeat until all dough and filling are used.

Cooking

    Cook the Gyoza

    In a large skillet, heat a tablespoon of oil over medium-high heat. Add the gyoza and cook until the bottoms are golden brown, about 2-3 minutes. Carefully add 1/4 cup of water to the skillet and quickly cover with a lid. Allow to steam for 5-7 minutes or until the water has evaporated. Remove the lid and cook for another 1-2 minutes to ensure the bottoms are crispy.

    In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, chili oil, and sugar until well combined. Adjust seasoning to taste and serve alongside the gyoza.
