    Clean the Mussels

    Rinse the green mussels under cold running water. Scrub the shells with a brush to remove any dirt or barnacles. Remove the beards (the fibrous clumps attached to the mussels) by pulling them off.

    Mince Garlic

    Peel and finely mince the garlic cloves.

    Chop Parsley

    Rinse the fresh parsley, dry it, and chop it finely.

    Prepare Lemon

    Cut the lemon in half, and set aside one half for garnish. Squeeze the juice from the other half into a bowl.

Cooking

    Heat Oil

    In a large pot, heat the olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the pot and sauté for about 1-2 minutes, until fragrant, but not browned.

    Add Mussels and Wine

    Add the cleaned green mussels and white wine to the pot. Stir gently to combine.

    Sprinkle the salt and black pepper over the mussels, then cover the pot with a lid.

    Cook the mussels for about 5-7 minutes or until they have opened up. Discard any mussels that remain closed.

    Remove the pot from heat, and stir in the chopped parsley and fresh lemon juice.
