Method

Preparation of Vegetables

  1. 1

    Prepare Spinach

Wash the spinach thoroughly under running water to remove any dirt or grit. Bring a large pot of water to a boil.

  2. 2

    Blanch Spinach

Once the water is boiling, add the spinach. Blanch for about 1-2 minutes until the spinach is wilted but still bright green.

  3. 3

    Cool Spinach

Immediately transfer the blanched spinach to a bowl of ice water to stop the cooking process. Let it cool for a few minutes.

  4. 4

    Drain Spinach

Once cooled, drain the spinach and gently squeeze out excess water. Chop the spinach into bite-sized pieces and set aside.

Preparation of Dressing

  1. 5

    Toast Sesame Seeds

In a dry skillet over medium heat, add the sesame seeds. Toast them for about 3-5 minutes, stirring frequently, until they are golden and fragrant. Remove from heat and set aside.

  2. 6

    Mix Dressing Ingredients

In a small bowl, combine soy sauce, mirin, sugar, and sesame oil. Stir until the sugar is dissolved.

Combine and Serve

  1. 7

    Combine Spinach and Dressing

In a large bowl, add the chopped spinach. Pour the prepared dressing over the spinach.

  2. 8

    Add Sesame Seeds

Sprinkle the toasted sesame seeds over the spinach and dressing mixture.

  3. 9

    Toss to Combine

Gently toss the spinach, dressing, and sesame seeds together until the spinach is well coated.

  4. 10

    Serve

Transfer the goma ae to a serving dish and enjoy as a side dish or appetizer.
