In a mixing bowl, crack the 4 large eggs. Add the soy sauce, mirin, sugar, and salt. Whisk the mixture until well combined and frothy. This will be your egg mixture for the Tamago.

Prepare the Pan
Heat a non-stick rectangular or square pan over medium-low heat. Add 1 tablespoon of vegetable oil and spread it evenly across the surface with a spatula or paper towel.

Roll the Omelette
Using a spatula, carefully roll the cooked layer from one end to the other, forming a log shape. Once rolled, push the rolled omelette to one side of the pan.

Repeat the Process
Allow this layer to cook for 1-2 minutes, then roll the previous omelette over it again. Repeat this process until all the egg mixture is cooked, rolling each layer into the previous one.

Final Cooking
Once all layers are cooked and rolled, let the Tamago cook for another minute to ensure it is fully set. Remove from the pan and allow to cool slightly.
