Prepare Sushi Rice

    Rinse and Cook the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Pour the mixture over the rice and fold gently to combine. Allow the rice to cool to room temperature.

Prepare Fillings

    Prepare Shrimp Tempura

    If not already cooked, prepare shrimp tempura according to package instructions or your preferred recipe. Allow to cool slightly.

    Slice Eel and Avocado

    Slice the cooked eel into thin strips and slice the avocado in half, removing the pit, and cutting it into thin slices.

Assemble the Dragon Roll

    Lay Out Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread Sushi Rice

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Place the shrimp tempura and sliced eel in a line along the center of the rice. Add a few slices of avocado on top.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, tucking the ingredients in tightly. Continue rolling until you reach the top edge of the nori. Moisten the edge with a little water to seal.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth between cuts for clean edges.

Garnish and Serve

    Garnish

    Sprinkle sesame seeds over the top of the roll for garnish.

    Serve

    Plate the dragon rolls and serve with soy sauce and wasabi on the side.
