    Prepare the Marinade

    In a bowl, combine soy sauce, minced garlic, and grated ginger. Whisk until well mixed.

    Marinate the Chicken

    Place the chicken breasts in a zip-lock bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.

    Prepare Vegetables

    While the chicken is marinating, wash and slice the bell pepper, cut broccoli into small florets, and julienne the carrot.

    Cook the Chicken

    Heat vegetable oil in a large skillet or wok over medium-high heat. Remove chicken from the marinade (reserve the marinade) and add to the skillet. Cook for 5-7 minutes on each side until fully cooked and golden brown. Remove from skillet and set aside.

    Stir-fry Vegetables

    In the same skillet, add the bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

    Combine Chicken and Vegetables

    Return the cooked chicken to the skillet with the vegetables. Pour in the reserved marinade and stir everything together. Cook for an additional 2-3 minutes until heated through.

    Serve

    Serve the chicken and vegetables over a bed of cooked rice. Garnish with sesame seeds.
