Main Dish Preparation

    Prepare the Chicken

    Preheat the oven to 400°F (200°C). In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture over the chicken breasts.

    Bake the Chicken

    Place the chicken breasts on a baking tray lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).

    Prepare the Vegetables

    Chop the bell peppers, zucchini, and red onion into bite-sized pieces. In a bowl, toss the vegetables with olive oil, Italian seasoning, and salt.

    Roast the Vegetables

    Spread the seasoned vegetables on a baking sheet and roast in the oven (alongside the chicken) for about 20-25 minutes, or until tender and slightly charred.

    Sauté the Aromatics

    In a medium saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Cook the Rice

    Add the long grain rice to the saucepan and stir well to coat the rice in the butter. Pour in the chicken broth and add salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and liquid is absorbed.
