Preparation
- 1
Prepare the Chicken
Cut the chicken breast into bite-sized pieces and season lightly with salt and pepper.
- 2
Chop the Vegetables
Wash and cut the broccoli into florets, slice the bell pepper into thin strips, and julienne the carrot.
Cooking
- 3
Cook the Chicken
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- 4
Stir-Fry the Vegetables
In the same skillet, add another tablespoon of oil if necessary. Add the broccoli, bell pepper, and carrot. Stir-fry for about 3-4 minutes, until the vegetables are tender-crisp.
- 5
Make the Teriyaki Sauce
In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, cornstarch, and water until smooth.
- 6
Combine Chicken and Vegetables
Return the cooked chicken to the skillet with the vegetables. Pour the teriyaki sauce over the mixture and stir to combine. Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the chicken and vegetables.
Serving
- 7
Garnish and Serve
Sprinkle sesame seeds and sliced green onions over the chicken teriyaki before serving. Serve hot over cooked rice or noodles.
