Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 20 minutes or until the water is absorbed.

    Season the Rice

    Once cooked, remove from heat and let it sit covered for 10 minutes. Then, transfer the rice to a large bowl and mix in rice vinegar, sugar, and salt while the rice is still warm. Allow to cool to room temperature.

Prepare Fillings

    Prepare the Crab

    If using imitation crab meat, shred it into small pieces. If using real crab, ensure it's cooked and flaked.

    Slice the Avocado

    Cut the avocado in half, remove the pit, and slice into thin strips.

    Slice the Cucumber

    Peel the cucumber (optional) and slice it into thin strips, lengthwise.

Assemble the Rolls

    Prepare the Rolling Surface

    Lay a bamboo sushi mat on a clean surface. Place a sheet of nori on the mat, shiny side down.

    Spread the Rice

    Wet your hands to prevent sticking. Take about a cup of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    In the center of the rice, arrange a line of shredded crab, avocado slices, and cucumber strips.

    Roll the Sushi

    Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to form a tight roll. Roll until you reach the border of nori, wet the edge with a little water to seal.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

    Garnish and Serve

    Sprinkle sesame seeds on top of the sushi rolls. Serve with soy sauce, pickled ginger, and wasabi on the side.
