Method

Preparation of Calamari

  1. 1

    Clean and Cut Calamari

Begin by cleaning the calamari if not already cleaned. Cut the cleaned squid into rings, about 1/2 inch thick.

Marinade Preparation

  1. 2

    Combine Marinade Ingredients

In a medium bowl, whisk together the soy sauce, brown sugar, mirin, sesame oil, minced garlic, grated ginger, cornstarch, and water until well combined and the sugar is dissolved.

  2. 3

    Marinate Calamari

Add the calamari rings to the marinade. Ensure they are well coated. Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

Cooking

  1. 4

    Cook the Calamari

Heat a large skillet or wok over medium-high heat. Once hot, add the marinated calamari along with the marinade. Stir-fry for about 3-4 minutes until the calamari is cooked through and the sauce has thickened.

Serving

  1. 5

    Garnish and Serve

Remove the skillet from heat. Sprinkle the cooked calamari with sesame seeds and chopped green onions. Serve immediately with steamed rice or noodles.
