Prepare the Base

    Cook the Rice

    Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a pot, combine the rice with 1.5 cups of water and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare Vegetables

    While the rice is cooking, shred the carrots and slice the cucumber. Set aside in separate bowls.

    Prepare Edamame

    If using frozen edamame, steam or boil for about 5 minutes until tender. Drain and set aside.

Prepare Protein

    Grill Chicken

    Season 100 grams of chicken breast with salt and pepper. Grill over medium heat for 6-7 minutes on each side or until cooked through. Let it rest before slicing.

    Fry Tofu

    Cube 100 grams of firm tofu and pat dry. Heat a tablespoon of oil in a non-stick skillet over medium heat. Fry the tofu cubes until golden brown on all sides, about 8-10 minutes.

    Layer the Ingredients

    In a bento box or divided lunch container, start with a base of jasmine rice. Add sections for shredded carrots, sliced cucumber, and edamame.

    Add Protein

    Place the sliced grilled chicken or pan-fried tofu on top of the rice. Choose one or both proteins based on your preference.

    Garnish

    Drizzle with soy sauce, sprinkle sesame seeds over the top, and add a side of pickled ginger. Include wasabi if desired.
