    Prepare the Vegetables

    Wash and chop the eggplant and potatoes into bite-sized pieces. Finely chop the onion, tomatoes, garlic, ginger, and green chili.

    Cook the Onion and Spices

    Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Then add garlic, ginger, and green chili, and cook for another minute.

    Add Tomatoes and Spices

    Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften and the oil starts to separate from the mixture.

    Add Eggplant and Potatoes

    Stir in the chopped eggplant and potatoes. Mix well to coat the vegetables with the spices. Cover the pan and let it cook for about 15-20 minutes, stirring occasionally, until the vegetables are tender.

    Finish with Garam Masala

    Once the vegetables are cooked, sprinkle garam masala over the curry and mix well. Cook for another 2-3 minutes.

    Garnish and Serve

    Garnish with fresh cilantro and serve hot with rice or flatbread.
