Preparing Almond Milk

Soak Almonds
Place 1 cup of almonds in a bowl and cover them with 2 cups of water. Let them soak for at least 4 hours or overnight.

Blend Almonds
After soaking, drain the almonds and rinse them. In a blender, combine the soaked almonds with 2 cups of fresh water. Blend on high until the mixture is smooth and creamy.

Strain Almond Milk
Using a nut milk bag or a fine mesh strainer, strain the blended almond mixture into a large bowl. Squeeze out as much liquid as possible. This liquid is your almond milk.
Flavoring the Milk

Infuse Saffron and Cardamom
In a small saucepan, gently heat the almond milk over low heat. Add 1 tsp of saffron strands and 4 whole cardamom pods. Allow it to simmer for about 5 minutes, stirring occasionally to prevent sticking.

Sweeten the Milk
Remove from heat and stir in 2 tablespoons of sweetener (maple syrup or agave) to taste. Adjust sweetness as needed.

Cool the Milk
Let the milk cool to room temperature, then refrigerate until chilled.

Once chilled, pour the tiger's milk into glasses. Top with 1 tablespoon of chopped almonds and a sprinkle of ground cardamom for added flavor and crunch.
