Method

Filling Preparation

  1. 1

    Boil Potatoes

Boil the potatoes until tender, about 15 minutes. Once cooked, drain and let them cool. Peel and mash them in a bowl.

  2. 2

    Heat Oil and Cumin

In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter.

  3. 3

    Sauté Onions

Add chopped onions and ginger to the pan. Sauté until the onions are translucent, about 5 minutes.

  4. 4

    Add Green Peas

Stir in the green peas and cook for another 3-4 minutes until they are tender.

  5. 5

    Mix in Spices

Add mashed potatoes to the pan along with coriander powder, garam masala, turmeric powder, and salt. Mix well and cook for 5 minutes.

  6. 6

    Finish Filling

Remove from heat and stir in lemon juice and chopped cilantro. Let the filling cool.

Pastry Preparation

  1. 7

    Combine Flour and Salt

In a large bowl, combine all-purpose flour and salt. Mix well.

  2. 8

    Add Oil

Add 2 tablespoons of oil and mix until the mixture resembles breadcrumbs.

  3. 9

    Knead Dough

Gradually add water, mixing until a smooth dough forms. Knead for about 5 minutes.

  4. 10

    Rest Dough

Cover the dough with a damp cloth and let it rest for 30 minutes.

Assembling and Frying

  1. 11

    Roll Out Dough

Divide the dough into small balls. Roll each ball into a thin oval or circle.

  2. 12

    Cut Dough

Cut the rolled dough in half to form two semi-circles.

  3. 13

    Form Cone

Take one semi-circle, and form a cone by folding the straight edge towards the center. Seal the edge with a little water.

  4. 14

    Fill and Seal

Fill the cone with the potato and pea filling, then seal the open edge using water.

  5. 15

    Heat Oil for Frying

In a deep frying pan, heat the oil for frying over medium heat. Once hot, gently slide in the samosas in batches.

  6. 16

    Fry Samosas

Fry the samosas until golden brown, about 5-7 minutes. Remove and drain on paper towels.

  7. 17

    Serve

Serve hot with chutney or sauce of your choice.
