Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Add the ghee or oil and mix until the mixture resembles coarse crumbs. Gradually add water, kneading until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a pan, heat a little oil and add cumin seeds. When they start to crackle, add grated ginger, minced garlic, and chopped green chili. Sauté for a minute. Add the boiled and mashed potatoes, green peas, coriander powder, garam masala, salt, and lemon juice. Mix well and cook for 5 minutes. Stir in chopped coriander leaves and let the mixture cool.

Assemble the Samosas
Divide the dough into small balls. Roll each ball into a thin oval shape. Cut it in half to form two semi-circles. Take one semi-circle, apply water on the edges, and shape it into a cone. Fill the cone with the potato filling and seal the edges by pressing them together.

Fry the Samosas
In a deep frying pan, heat oil over medium heat. Once hot, gently slide the prepared samosas into the oil, frying in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
