Roasting Corn

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Corn

    Brush the corn on the cobs with olive oil and sprinkle with salt.

    Roast Corn

    Place the corn on a baking sheet and roast in the oven for about 25-30 minutes, turning occasionally, until the kernels are slightly charred and tender.

    Cool and Cut

    Once roasted, remove the corn from the oven and let it cool slightly. Using a sharp knife, carefully cut the kernels off the cobs and set aside.

Preparing Chaat

    Combine Ingredients

    In a large mixing bowl, combine the roasted corn, diced tomato, diced cucumber, pomegranate seeds, and chopped cilantro.

Making Vinaigrette

    Toast Mustard Seeds

    In a small pan over medium heat, toast the mustard seeds until they start to pop, about 2-3 minutes. Remove from heat and let cool.

    Mix Vinaigrette

    In a small bowl, whisk together the toasted mustard seeds, olive oil, apple cider vinegar, honey, salt and black pepper until well combined.

Final Assembly

    Dress the Chaat

    Pour the mustard seed vinaigrette over the corn and vegetable mixture. Toss gently to combine everything evenly.

    Serve the roasted corn chaat immediately, garnished with additional cilantro if desired.
