Pista Burfi Base Preparation

    Prepare the Pistachios

    Soak the pistachios in warm water for 30 minutes, then drain and peel off the skins. Finely grind the pistachios in a food processor until they form a coarse powder. Set aside.

    Cook the Burfi Mixture

    In a heavy-bottomed pan, heat the ghee over medium flame. Add the ground pistachios, condensed milk, sugar, and cardamom powder. Stir continuously to avoid burning, until the mixture thickens and leaves the sides of the pan (about 10-15 minutes).

    Add Flavorings

    Remove from heat and mix in the rose water. Stir well until fully incorporated.

    Set the Burfi

    Grease a tray or a plate with a little ghee. Transfer the burfi mixture onto the tray and spread it evenly with a spatula. Press it down firmly. Garnish with sliced almonds. Allow it to cool at room temperature for at least 1 hour or until set.

Beet-Lemon Curd Preparation

    Make the Curd Mixture

    In a medium saucepan, combine the beetroot puree, lemon juice, and sugar. Heat over medium heat until the sugar dissolves.

    Whisk in Eggs

    In a separate bowl, lightly whisk the eggs. Slowly add the eggs into the beet mixture while stirring continuously to prevent the eggs from scrambling.

    Cook Until Thickened

    Continue to cook the mixture over low heat, stirring constantly, until it thickens (about 5-7 minutes). Do not let it boil.

    Finish with Butter

    Remove from heat and stir in the butter until fully melted and combined. Let the curd cool to room temperature.
