Method

Prepare Pav Bhaji

    Cook Mixed Vegetables

    In a pressure cooker or pot, add the mixed vegetables (potatoes, peas, carrots, bell peppers) and enough water to cover them. Cook until they are soft and fully cooked, about 10-15 minutes. If using a pressure cooker, cook for 2 whistles.

    Prepare the Bhaji Base

    In a large pan, melt 2 tbs of butter over medium heat. Add chopped onions and sauté until translucent. Add ginger-garlic paste and chopped green chili, and sauté for another 2 minutes.

    Add Tomatoes and Spices

    Add chopped tomatoes to the pan and cook until they are soft and mushy. Stir in the pav bhaji masala and salt, mixing well.

    Mash the Vegetables

    Once the vegetables are cooked and drained, add them to the pan with the tomato mixture. Mash everything together using a potato masher. Adjust the consistency with water if needed, and simmer for 5-10 minutes.

    Finish with Cilantro

    Stir in the remaining 2 tbs of butter and chopped cilantro into the bhaji. Remove from heat and keep warm.

Prepare Pav

    Toast the Pav Buns

    In a separate pan, heat 2 tbs of butter over medium heat. Slice the pav buns horizontally and place them on the pan. Toast until golden brown on both sides, about 2-3 minutes per side.

Serve

    Plate and Serve

    Serve the hot bhaji in a bowl with a dollop of butter on top. Accompany with toasted pav buns, lime wedges, and extra chopped onion on the side.
