Puri Shells

    Prepare the Dough

    In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add water and knead to form a dough. Let the dough rest for 30 minutes.

    Roll and Fry

    After resting, divide the dough into small balls. Roll each ball into a thin circle. Heat oil in a deep pan. Fry the rolled puris until they puff up and turn golden brown. Drain on paper towels.

Chickpeas and Spiced Potato Filling

    Prepare the Filling

    In a mixing bowl, mash the boiled potatoes and add the boiled chickpeas. Add chopped onions, cilantro, chaat masala, salt, cumin powder, and red chili powder. Mix well.

Chili Mint Water or Tamarind Water

    Prepare the Water

    In a blender, combine mint leaves, cilantro, green chilies, tamarind pulp, salt, and sugar. Add water and blend until smooth. Strain if desired.

Assembly

    Assemble Pani Puri

    Take a puri shell and gently crack the top. Fill it with the chickpea and potato mixture. Drizzle with chili mint water or tamarind water. Top with sev before serving.
