Okra Preparation

Wash and Cut Okra
Rinse the okra under cold water and pat dry with a kitchen towel. Trim the ends and slice each okra into thin matchstick shapes.

Seasoning
In a large bowl, combine the cut okra, salt, and turmeric powder. Toss well to coat the okra evenly with the spices.

Dredge in Rice Flour
Sprinkle the rice flour over the seasoned okra. Use your hands to toss and coat the okra so that each piece is evenly coated with flour.
Frying

Heat Oil
In a deep frying pan or a heavy-bottomed pot, heat the oil over medium heat until it reaches 350°F (175°C).

Fry Okra
Carefully add the coated okra in batches to the hot oil. Fry until they are crispy and golden brown, about 3-5 minutes. Remove the fried okra with a slotted spoon and drain on paper towels.
Finishing Touch

Season with Chaat Masala
While the fried okra is still hot, sprinkle the chaat masala over the top and toss gently to combine.

Add Lemon Juice
Drizzle the lemon juice over the fries for added flavor and toss again.

Transfer the okra fries to a serving platter and serve immediately with Maggi ketchup on the side for dipping.
