Preparation

Preparation

1. Soak Skewers

If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.

2. Prepare the Mixture

In a large bowl, combine the ground lamb with cumin powder, coriander powder, garam masala, red chili powder, salt, and black pepper. Mix well.

3. Add Aromatics

Add minced garlic, minced ginger, chopped onion, chopped green chili, and chopped cilantro to the lamb mixture. Mix until all ingredients are evenly combined.

4. Bind the Mixture

Crack the egg into the mixture and add breadcrumbs. Mix until the mixture holds together well.

Forming Kebabs

5. Shape Kebabs

Take a handful of the lamb mixture and mold it onto the soaked skewers, shaping into long kebabs. Make sure the mixture is firmly packed around each skewer.

6. Chill the Kebabs

Place the shaped kebabs on a plate and refrigerate for at least 30 minutes to help them hold their shape during grilling.

Grilling

7. Preheat Grill

Preheat your grill to medium-high heat.

8. Grill Kebabs

Place the kebabs on the preheated grill. Cook for about 10-12 minutes, turning occasionally until they are evenly browned and cooked through.

9. Check for Doneness

Ensure the internal temperature of the kebabs reaches 70°C (160°F).

Serving

10. Serve Hot

Remove the kebabs from the grill and allow them to rest for a few minutes. Serve hot with mint chutney and lemon wedges.
