Preparation of Ingredients

  1. 1

    Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, then drain.

  2. 2

    Marinate the Lamb

In a bowl, mix the cubed lamb with yogurt, garlic, ginger, turmeric, red chili powder, coriander powder, and salt. Cover and marinate for at least 1 hour, preferably overnight.

Cooking

  1. 3

    Sauté Onions

In a large pot or pressure cooker, heat the cooking oil or ghee over medium heat. Add the sliced onions and sauté until they are golden brown.

  2. 4

    Cook Lamb

Add the marinated lamb to the pot and cook until browned, about 5-7 minutes. Stir in the chopped tomato, cumin seeds, and garam masala. Cook for another 5 minutes.

  3. 5

    Add Water

Pour in the water and bring to a boil. Reduce heat, cover, and simmer for 30-40 minutes until the lamb is tender.

  4. 6

    Cook Rice

In a separate pot, bring water to a boil. Add the soaked and drained basmati rice and cook until it's about 70% done. Drain the rice.

  5. 7

    Layering

Once the lamb is tender, layer the partially cooked rice over the lamb in the pot. Sprinkle chopped cilantro and mint over the top. Cover tightly with a lid.

  6. 8

    Final Cooking

Cook on a low heat for an additional 20-25 minutes until the rice is fully cooked and has absorbed the flavors. Do not open the lid during this time.

Serving

  1. 9

    Serve

Fluff the biryani gently with a fork before serving. Serve hot with raita or a salad on the side.
