Cordial Preparation
Make the Mint-Ginger Cordial
In a saucepan, combine the fresh mint leaves, grated ginger, masala spice blend, sugar, and water.
Simmer the Mixture
Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar. Once boiling, reduce heat and let it simmer for 10 minutes.
Strain the Cordial
Remove from heat and let it cool. Once cooled, strain the mixture through a fine mesh sieve into a clean jar to remove the solids. The cordial can be refrigerated for up to two weeks.
Drink Assembly
Prepare the Glasses
In each serving glass, add 1/4 cup of the mint-ginger cordial.
Add Lemon Juice
Pour in 2 tablespoons of fresh lemon juice into each glass.
Mix with Ice
Fill the glasses with ice cubes and then top each glass with soda water, stirring gently to combine.
Garnish
Garnish each drink with a sprig of fresh mint for an aromatic touch.
Serve
