Prepare the Dough
In a large bowl, mix the whole wheat flour and salt. Gradually add water and knead until you have a soft and pliable dough. Cover with a damp cloth and let rest for 30 minutes.

Roll the Paratha
Divide the dough into equal portions. Roll each portion into a thin circle. Heat a skillet over medium heat and cook each paratha for about 2-3 minutes on each side, brushing with a little oil until golden brown. Keep warm.
For the Tamarind BBQ Sauce

Make the Sauce
In a saucepan, combine tamarind paste, brown sugar, soy sauce, smoked paprika, garlic powder, and water. Bring to a simmer and cook for 5-7 minutes until slightly thickened. Set aside.
For the Pickled Red Onion

Pickle the Onion
In a bowl, mix the sliced red onion, apple cider vinegar, sugar, and salt. Let sit for at least 30 minutes for the flavors to meld.

Prepare the Slaw
In a mixing bowl, combine shredded cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well and set aside.

Cook the Jackfruit
In a skillet, heat oil over medium heat. Add diced onion and minced garlic, cooking until softened. Add shredded jackfruit, cumin powder, chili powder, and salt. Cook for 10-15 minutes until jackfruit is tender and flavors are combined.
