    Prepare the Ingredients

    Chop the onion and bell pepper into thin strips. Shred the cabbage and slice the spring onions diagonally. If using chicken, cut it into thin strips or bite-sized pieces.

    Cook the Noodles

    Bring a pot of water to a boil. Add the Chinese wheat noodles and cook according to package instructions, usually around 3-5 minutes until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Sauté the Chicken (if using)

    In a large wok or frying pan, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken pieces and stir-fry for about 5-7 minutes until cooked through. Remove from the pan and set aside.

    Stir-Fry the Vegetables

    In the same pan, add another tablespoon of sesame oil. Add the chopped onions, bell pepper, and cabbage. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.

    Combine Noodles and Sauce

    Add the cooked noodles, soy sauce, and chili sauce to the vegetable mixture. Toss well to combine all ingredients. If you cooked chicken, add it back into the pan at this stage.

    Garnish and Serve

    Remove from heat and garnish with sliced spring onions. Serve hot and enjoy your Hakka noodles!
