Marinate the Shrimp
In a bowl, combine the shrimp, salt, and lemon juice. Mix well and let it marinate for at least 15 minutes.

Prepare the Gunpowder Coating
Dry roast the chana dal in a pan over medium heat until golden brown. Let it cool and then grind it into a fine powder.

Combine Ingredients
In a mixing bowl, combine the ground chana dal, sesame seeds, curry leaves (finely chopped), Kashmiri red chili powder, turmeric powder, cumin seeds, and black pepper. Mix well to form the gunpowder coating.

Coat the Shrimp
Take the marinated shrimp and coat each piece with the gunpowder mixture, ensuring an even coverage.

Fry the Shrimp
In a deep frying pan, heat oil over medium-high heat. Once hot, carefully add the coated shrimp and fry until golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
