Method

Preparing the Dough

  1. 1

    Mixing Ingredients

In a mixing bowl, combine khoya, all-purpose flour, baking powder, milk, and ghee. Mix well until you achieve a smooth dough.

  2. 2

    Shaping the Dough Balls

Divide the dough into small portions, roughly the size of a marble. Roll each portion into a smooth ball, ensuring there are no cracks on the surface.

Preparing the Syrup

  1. 3

    Making the Sugar Syrup

In a saucepan, combine sugar and water. Heat over medium flame until the sugar dissolves completely. Add rose water and cardamom powder. Stir well and allow the syrup to simmer for 5 minutes. Remove from heat and set aside.

Frying the Dough Balls

  1. 4

    Heating the Oil

In a deep frying pan, heat ghee or oil over medium heat. Ensure the oil is hot enough by dropping a small piece of dough into the oil; it should sizzle and rise to the surface.

  2. 5

    Frying the Gulab Jamun

Carefully add the rolled dough balls into the hot oil, a few at a time. Fry them on low to medium heat, turning occasionally until they are golden brown on all sides. This should take about 5-7 minutes.

Soaking in Syrup

  1. 6

    Soaking the Fried Balls

Once the dough balls are fried, remove them from the oil and drain on paper towels. Immediately place them in the warm sugar syrup and let them soak for at least 30 minutes, allowing them to absorb the syrup.
