Curry Preparation

    Prepare the Ingredients

    Finely slice the onions, garlic, and tomatoes. Grate the ginger and set aside.

    Caramelize the Onions

    In a large pot, heat the oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they turn golden brown and caramelized, about 15-20 minutes.

    Add Garlic and Ginger

    Add the minced garlic and grated ginger to the pot and cook for another 2-3 minutes until fragrant.

    Add Goat Meat

    Add the bone-in goat meat to the pot, browning it on all sides for about 5-7 minutes.

    Add Tomatoes and Spices

    Stir in the chopped tomatoes, curry powder, cumin seeds, turmeric powder, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.

    Slow Cook

    Pour in the coconut milk and stir well. Bring to a simmer, cover, and reduce the heat. Let it cook for about 1.5 to 2 hours, or until the goat meat is tender, stirring occasionally.

Rice Preparation

    Rinse the Rice

    Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed basmati rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.

    Fluff the Rice

    Remove the saucepan from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
