Prepare Puri Shells

Make the Dough
In a mixing bowl, combine all-purpose flour, semolina, baking soda, and salt. Gradually add water and knead into a stiff dough. Cover with a damp cloth and let it rest for 30 minutes.

Roll and Fry
After resting, divide the dough into small balls. Roll each ball into a thin circle. Heat oil in a deep frying pan over medium heat. Fry the puris until they puff up and turn golden brown. Remove and drain on paper towels.

Mix Filling Ingredients
In a mixing bowl, combine cooked chickpeas, mashed potatoes, finely chopped onions, chaat masala, red chili powder, and salt. Mix well until evenly combined.
Assemble Dahi Puri

Fill the Puri
Take each puri shell and make a small hole on top. Fill it with the chickpea and potato mixture.

Add Toppings
Top each filled puri with sweet yogurt, green chutney, and tamarind chutney. Finally, sprinkle sev on top for crunch.
