Method
Chole (Chickpea Curry)

Soak Chickpeas
In a bowl, soak the dry chickpeas in water overnight or for at least 8 hours.

Cook Chickpeas
Drain the soaked chickpeas and place them in a pressure cooker with 3 cups of water. Cook for about 20 minutes or until soft. Set aside.

Add Ginger-Garlic Paste
Stir in the ginger-garlic paste and slit green chilies, and cook for another 2 minutes.

Add Tomatoes and Spices
Pour in the pureed tomatoes, and add coriander powder, garam masala, red chili powder, turmeric powder, and salt. Cook until the oil separates from the mixture.

Combine Chickpeas
Add the cooked chickpeas to the pan along with a little water if needed. Stir well to combine and let it simmer for 10 minutes. Adjust seasoning as needed.

Garnish
Garnish with chopped cilantro before serving.
Bhature (Fried Bread)

Prepare Dough
In a large bowl, mix all-purpose flour, yogurt, baking powder, sugar, and salt. Gradually add warm water to form a soft, pliable dough. Knead for about 5-7 minutes.

Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 2 hours.

Roll and Fry
After resting, divide the dough into small balls. Roll each ball into a circular shape about 6 inches in diameter.

Heat Oil
In a deep frying pan, heat oil over medium-high heat.

Fry Bhature
Carefully drop the rolled dough into the hot oil. Fry until golden brown and puffed up, about 1-2 minutes on each side. Remove and drain on paper towels.

Serve the hot bhature alongside the chole. Enjoy!
