Preparation

    Soak the Chickpeas

    If using dried chickpeas, soak them in water overnight. Drain and rinse before cooking. If using canned chickpeas, rinse and drain them.

    Chop Vegetables

    Finely chop the onion, tomato, bell pepper, and carrot. Mince the garlic and grate the ginger.

    Prepare Spinach

    Wash the spinach thoroughly and set aside. If using large leaves, chop them roughly.

Cooking

    Cook Onion and Spices

    In a large pot, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Add chopped onion and sauté until golden brown.

    Add Garlic and Ginger

    Add minced garlic and grated ginger to the pot. Sauté for 1-2 minutes until fragrant.

    Add Tomatoes and Spices

    Add chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.

    Incorporate Chickpeas and Vegetables

    Add the soaked (or canned) chickpeas, bell pepper, and carrot to the pot. Stir well to combine all ingredients.

    Simmer

    Add 2 cups of water, cover the pot, and let it simmer on low heat for about 20 minutes, stirring occasionally.

    Add Spinach and Garam Masala

    Once the vegetables are tender, add the spinach and garam masala. Cook for an additional 5 minutes until the spinach wilts.

Finishing Touches

    Garnish and Serve

    Turn off the heat, and stir in lemon juice and chopped cilantro. Serve hot with rice or bread.
