Salad Preparation
Prepare the Chinese Cabbage
Wash the Chinese cabbage thoroughly under cold water. Remove any damaged outer leaves. Slice it into thin strips and place them in a large mixing bowl.
Chop the Vegetables
Dice the green chili (remove seeds if less heat is desired) and bell pepper. Add the chopped vegetables to the bowl with the cabbage.
Add Nuts and Coconut
Add the cashews and shredded coconut to the bowl. Mix all the salad ingredients together gently to combine.
Vinaigrette Preparation
Mix the Vinaigrette
In a separate bowl, whisk together the blood orange juice, grated ginger, olive oil, honey, salt, and black pepper until well combined.
Combine the Salad and Vinaigrette
