Method

Prepare the Paratha

    Make the Dough

    In a large bowl, mix the all-purpose flour and salt. Gradually add water and knead until the dough is smooth and pliable. Cover and let it rest for 30 minutes.

    Roll and Cook

    Divide the dough into equal portions. Roll each portion into a circle. Heat a skillet over medium heat, add oil or ghee, and cook each paratha until golden brown on both sides.

Prepare the Chicken Filling

    Marinate the Chicken

    In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Add the chicken and marinate for at least 30 minutes.

    Cook the Chicken

    Heat oil in a skillet over medium heat. Add the marinated chicken and cook until fully cooked and slightly charred, about 10-15 minutes. Remove from heat and let it cool before slicing.

Prepare the Desi Slaw

    Mix Ingredients

    In a bowl, combine the finely shredded cabbage, grated carrot, lemon juice, salt, and chopped cilantro. Toss well to combine and set aside.

Prepare the Green Chutney

    Blend the Chutney

    In a blender, combine fresh cilantro, mint leaves, green chili, lemon juice, and salt. Blend until smooth. Adjust seasoning as necessary.

Prepare the Raita

    Mix Raita Ingredients

    In a bowl, combine yogurt, grated cucumber, cumin powder, and salt. Mix well and refrigerate until serving.

Pickle the Jalapeños

    Prepare the Pickle

    In a saucepan, combine sliced jalapeños, vinegar, sugar, and salt. Bring to a boil, then reduce heat and simmer for 10 minutes. Allow to cool and store in a jar.

Assemble the Chicken Frankie Roll

    Wrap it Up

    Take a paratha, spread a layer of green chutney, add sliced chicken, desi slaw, pickled jalapeños, and a drizzle of raita. Roll it tightly and serve immediately.
