Start by patting the chicken thighs dry with paper towels. Season both sides with salt, black pepper, and paprika.

Chop the Vegetables

Mince the garlic cloves, dice the red bell pepper and zucchini. Set aside.

Prepare the Chickpeas

Drain and rinse the chickpeas under cold water. Set aside.

Chop the Basil

Roughly chop the fresh basil leaves and set aside for garnishing.

Sear the Chicken

In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and sear them for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.

Sauté the Vegetables

In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Then add the diced red bell pepper and zucchini and cook for 4-5 minutes until softened.

Return the seared chicken to the skillet. Add the crushed tomatoes and chickpeas, stirring to combine. Bring the mixture to a simmer.
