Mixing the Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk them together until well combined.

Adding Yogurt
Add the yogurt to the dry ingredients and mix with your hands or a spatula until the mixture starts to come together.

Kneading the Dough
Gradually add warm water, a little at a time, and knead the dough until it is smooth and elastic, about 8-10 minutes. If the dough is too sticky, add a little more flour.

Resting the Dough
Once kneaded, drizzle a little oil over the dough, cover it with a damp cloth, and let it rest for at least 2 hours at room temperature.

Heating the Oil
In a deep frying pan or kadai, heat the oil over medium heat until hot. To check if the oil is ready, drop a small piece of dough into it; it should sizzle and rise to the surface.

Rolling the Dough
Divide the rested dough into equal portions (about 8-10). Roll each portion into a ball and flatten it with your hands. Using a rolling pin, roll out each piece into a circle about 6 inches in diameter, ensuring it's not too thin.

Frying
Carefully slide the rolled bhatura into the hot oil. Fry until it puffs up and turns golden brown, about 1-2 minutes on each side. Remove from oil and drain on paper towels.

Serve hot with your choice of curry or chole (chickpeas) and enjoy your fluffy bhaturas!
