Prepare the Ingredients

Cut the albacore tuna into bite-sized cubes and set aside. Slice the pickled jalapeños and have them ready.

Make the Tempura Batter

In a mixing bowl, combine the tempura batter mix with ice water. Stir gently until just combined; do not overmix.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Tuna

Dip each piece of albacore tuna into the tempura batter, allowing excess to drip off. Carefully place the battered tuna into the hot oil and fry for about 1-2 minutes until golden brown. Work in batches to avoid overcrowding.

Drain Excess Oil

Using a slotted spoon, remove the fried tuna from the oil and place it on a paper towel-lined plate to drain excess oil. Sprinkle with salt to taste.

Serve

On a plate, arrange the tempura tuna and top with sliced pickled jalapeños. Drizzle with mayonnaise and Szechuan glaze before serving.
