    Roast the Eggplant

    Preheat your oven to 400°F (200°C). Slice the eggplant in half lengthwise and score the flesh with a knife. Place the eggplant halves cut-side down on a baking sheet and roast in the oven for about 30-40 minutes until the skin is charred and the flesh is soft.

    Char the Green Onions

    While the eggplant is roasting, heat a skillet over medium-high heat. Add the green onions and char them for about 2-3 minutes on each side until they are tender and have grill marks. Remove from heat and let cool.

    Blend Ingredients

    Once the eggplant is roasted and cooled slightly, scoop the flesh into a food processor. Add the charred green onions, tahini, garlic, olive oil, lemon juice, salt, ground cumin, and paprika. Blend until smooth and creamy.

    Taste and Adjust

    Taste the baba ganoush and adjust seasoning if necessary. You can add more lemon juice, salt, or tahini based on your preference.

    Transfer the baba ganoush to a serving bowl, drizzle with additional olive oil, and sprinkle with fresh parsley. Serve with pita bread or fresh vegetables.
