Skewers

    Prepare ingredients

    Rinse cherry tomatoes and basil leaves. Pat dry thoroughly with paper towels or a clean kitchen towel to prevent watery skewers. If mozzarella balls are packed in water, drain and pat them dry as well.

    Assemble skewers

    Using a wooden skewer or toothpick, thread one cherry tomato, then one basil leaf (fold the leaf in half if large), then one mozzarella ball. Repeat the pattern (tomato–basil–mozzarella) if you want longer skewers, or keep to three pieces for bite-size. Make 24 skewers in total.

    Arrange the finished skewers on a serving platter with the tomato end up so they look tidy and colorful.

Dressing & Finish

    Make dressing

    In a small bowl, whisk together extra-virgin olive oil, balsamic glaze, and fresh lemon juice until combined. Season with sea salt and freshly ground black pepper, tasting and adjusting as needed. The mixture should be glossy and slightly thick from the glaze.

    Dress skewers

    Using a small spoon or by lightly drizzling, evenly distribute the dressing over the assembled skewers. Aim for about 1/2 tsp of dressing per skewer so they are coated but not soggy.

    Finish

    If desired, sprinkle a pinch of flaky sea salt over the skewers for texture. Optionally garnish the platter with a few extra basil leaves and a light additional drizzle of balsamic glaze for presentation.

    Serve immediately at room temperature. If preparing up to 1 hour ahead, cover loosely and refrigerate; bring to room temperature for 10–15 minutes before serving and reapply a small fresh drizzle of olive oil or glaze if needed.
