Soak breadcrumbs
In a small bowl combine panko breadcrumbs and whole milk. Let sit 5 minutes until the crumbs absorb the milk.

Mix meatball ingredients
In a large bowl add ground pork, ground beef, softened panko, grated onion, minced garlic, chopped thyme, egg, salt, and black pepper. Gently mix with your hands or a wooden spoon until just combined; avoid overworking to keep meatballs tender.

Form meatballs
Portion the mixture into roughly 1 1/4-inch (about 1.5 tablespoon) meatballs — you should get about 20–24 small meatballs. Roll gently to form uniform balls; don't compress them too tightly.

Cook meatballs
Heat a large skillet over medium heat and add olive oil. Once shimmering, add meatballs in a single layer without crowding (work in batches if necessary). Cook 3–4 minutes per side, turning carefully so all sides brown and internal temperature reaches 160°F (71°C). Remove meatballs to a plate lined with paper towel and reserve any pan fond (browned bits) in the skillet.

Cook down blackberries
With the same skillet (wipe out if there is excessive fat, leaving about 1 tablespoon of drippings), add the fresh blackberries, brown sugar, honey, balsamic vinegar, ketchup, soy sauce, minced garlic, minced ginger, lemon juice, salt, and black pepper. Cook over medium heat, stirring occasionally, until the berries start to break down and the mixture simmers, about 6–8 minutes.

Blend and strain (optional)
For a smoother sauce, use an immersion blender to purée the berry mixture directly in the pan until mostly smooth. If you prefer a seed-free sauce, pass the puréed mixture through a fine mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible; discard solids.

Thicken sauce
Return the strained or puréed sauce to the skillet and bring to a gentle simmer. Whisk together cornstarch and cold water to make a slurry, then stir it into the simmering sauce. Cook 1–2 minutes until the sauce thickens enough to coat the back of a spoon. Taste and adjust seasoning (add a touch more honey if too tart or a pinch of salt).

Combine meatballs and sauce
Add the cooked meatballs to the skillet with the blackberry sauce, gently toss to coat, and simmer together 3–4 minutes so flavors meld and meatballs finish cooking. If sauce becomes too thick, stir in 1–2 tablespoons water to loosen.
