Preparation

Prepare the Turkey
Preheat your smoker to 225°F (107°C). Rub the turkey breast with smoked paprika, black pepper, and salt. Let it sit for about 30 minutes to absorb the flavors.

Prepare the Pork Belly
Cut the pork belly into bite-sized cubes. Season with salt and black pepper. Let it marinate for 15-20 minutes.

Prepare the Jalapenos and Tomatoes
Slice the jalapenos in half and remove the seeds for less heat if desired. Dice the tomatoes into small pieces.
Smoking

Smoke the Turkey
Place the turkey breast in the smoker and smoke for about 3-4 hours or until the internal temperature reaches 165°F (74°C).

Smoke the Pork Belly
In the last hour of smoking the turkey, add the pork belly to the smoker. Smoke until crispy and cooked through, about 1 hour.

Combine Ingredients
Once the turkey and pork belly are done smoking, slice the turkey into thin pieces. In a large bowl, combine the sliced turkey, smoked pork belly, jalapenos, and diced tomatoes.

Fold in the pepper jack cheese until evenly distributed throughout the mixture.
