Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into even strips, about 1/4 inch thick to ensure they cook evenly.

Soak the Potatoes
Place the cut potato strips in a bowl of cold water for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the right temperature.

Drain the Fries
Once cooked, remove the fries with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Seasoning the Fries

Mix the Seasoning
In a small bowl, combine garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.

Season the Fries
While the fries are still hot, sprinkle the seasoning mixture over them and toss gently to coat evenly.

Add Cheese and Parsley
Finally, add the grated Parmesan cheese and chopped fresh parsley to the fries, mixing well to ensure they are evenly distributed.
