Preparing the Sausage Mixture

    Mix Ingredients

    In a large mixing bowl, combine the ground pork, minced garlic, salt, black pepper, red pepper flakes, oregano, thyme, paprika, and chopped parsley. Mix thoroughly with your hands until all ingredients are well incorporated.

    Prepare Hog Casings

    Rinse the natural hog casings under cold water. Soak in water for about 30 minutes to soften. Rinse again to remove any salt.

    Stuff the Sausages

    Using a sausage stuffer, carefully fill the soaked hog casings with the sausage mixture. Twist sausages into links, about 6 inches long, and tie off the ends with kitchen twine. Prick each sausage link with a pin to release air.

Cooking the Sausages

    Heat Oil

    In a large skillet, heat the olive oil over medium heat.

    Cook Sausages

    Place the sausage links in the skillet and cook for about 4-5 minutes per side, or until they are browned and cooked through.

    Once browned, add 1 cup of water to the skillet, cover, and reduce heat to low. Let the sausages simmer for an additional 10-15 minutes until fully cooked and tender.
