Corned Beef Preparation

    Braise the Corned Beef

    In a large pot, place the corned beef brisket and cover it with water. Add black peppercorns, bay leaves, mustard seeds, and crushed garlic cloves to the pot.

    Cook the Beef

    Bring the pot to a boil, then reduce the heat to low and cover. Let it simmer for about 3 hours, or until the corned beef is fork-tender.

    Rest the Corned Beef

    Once cooked, remove the corned beef from the pot and let it rest for 15 minutes before slicing against the grain.

Assembly

    Prepare the Sandwich

    On a slice of rye bread, layer a generous amount of sliced corned beef, followed by a layer of sauerkraut, and top it off with two slices of Swiss cheese.

    Add Dressing

    Spread 1000 Island dressing on another slice of rye bread and place it on top of the sandwich, dressing side down.

    Grill the Sandwich

    Heat a skillet over medium heat and place the sandwich on it. Grill each side for 3-4 minutes, or until the bread is golden brown and the cheese is melted.

    Once grilled, remove the sandwich from the skillet, slice in half, and serve immediately.
