To Prepare the Onion Rings

Slice the Onions
Peel the onions and cut them into 1/4-inch thick slices. Separate the slices into rings and set aside.

Make the Batter
In a large bowl, mix together the flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually add the cold sparkling water, whisking until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer for accuracy.

Coat the Onion Rings
Dip each onion ring into the batter, allowing the excess to drip off before placing them gently into the hot oil.

Fry the Onion Rings
Fry the onion rings in batches for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and let them drain on paper towels.

Serve the crispy onion rings hot with ranch dressing.

Mix the Dressing Ingredients
In a medium bowl, combine the mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, salt, and black pepper. Mix well until smooth.

Cover the ranch dressing and refrigerate for at least 30 minutes to allow the flavors to meld.
