    Wash and Cut the Potatoes

    Thoroughly wash the russet potatoes under running water to remove any dirt. Peel the potatoes if desired, then cut them into uniform sticks, approximately 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato sticks in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

    Heat the Oil

    In a large pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C). Use a thermometer to ensure the correct temperature for frying.

    Dry the Potatoes

    After soaking, drain the potato sticks and pat them dry with paper towels to remove excess moisture. This is important to prevent oil splatter during frying.

    Fry the Potatoes

    Carefully add a batch of the dried potato sticks to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

    While the fries are still hot, sprinkle them with salt and black pepper to taste. Toss gently to ensure even coverage.
